On an episode of Bizarre Foods (great show btw) he visits some people who eat road kill all the time. I'm sure you get quite the variety of critters that way. He also visited a charity that uses it to feed homeless (roadkill, plus food found in dumpsters). If you know what you're doing, it can be quite tasty apparently.

Bizarre foods are what people first ate when they were starving, and then later decided it was a delicacy

for example the milk maggot cheese

Here the eagles just sit on the fence posts waiting for roadkill, swoop in and drag it off the road for their own fine dining, don't even give the vultures a chance at it.
