high calorie diets cause the cells to make major histocompatibility complex II, a group of proteins usually expressed to help the immune system fight off viruses and bacteria ...this still sends local immune cells into a tizzy, and that causes inflammation....the negative long-term consequences of fat tissue inflammation in people who are obese, including insulin resistance and, eventually, full diabetes. This just appears to be a runaway immune response to a modern high calorie diet...
But high calorie diets are yummy!!!!!

And what causes high calorie diets? HFCS put in everything and modern wheat put in everything. Even if you are not a low-carb fan, shop on the outer edge of the grocery store and avoid the center isles.

I recently saw a good posting - Food that spoils quickly is good for you. Food that doesn't spoil is awful for you. It is indeed that food in the middle of the store that should be avoided. Those overly processed and modified foods aren't good for you.

i try to consume only things i make,grow,process with my own hands... i am luckier than most in that i have a bunch of bonus resources that most do not... do not think for a minute that i do not appreciate my good fortune...please also know that i would/will/do; happily share all that i have...

@Robert,
There are definitely areas within the USA that healthy food is difficult to come by. Grocery stores in the poor areas of LA, for example, are hard to find. Lots of fast food places. Sure they could 'take a bus' to the suburbs but that costs money too. In some ways I think the USA has to get smarter about the distance and availability of healthy food for people. .... (And do note the only way to do that is through anti-Libertarian means.)
